Life hits you sometimes clear between the eyes to let you know that something is amiss. I thought I’d share this healthy and delicious smoothie. We featured it often at our restaurant, LettuceLove Cafe, and the customers always love it! Chia Seed Pudding with Cacao (Raw Chocolate) – Vegan and just like old-fashioned Tapioca Pudding I first happened upon this delicious pudding last year in California while shopping in a very healthy grocery store in L.A.. I found it in their in the ‘take-out’ fridge section and was dazzled ever since. I was blown away at the simplicity of making it and the solid nutrition in it. There were 4 basic ingredients: Coconut Milk, Cacao Powder, Maple Syrup and of course, Chia Seeds. (Side note: Did you know that a Chia Seed can hold 9 times its weight in liquid? When you put Chia seeds in water or almond milk the seeds create a gel that us vegans sometimes use for baking (flax meal is also used this way). Butternut Squash just happens to be one of the healthier things you can eat, and this recipe is totally delicious! I think of this soup as, “Comfort Food to the Max”, because it warms me somehow to the bone and makes me feel awesomely nourished. This squash is harvested from early fall through winter and can be found at most grocery stores and farmers’ markets. These are the BEST HEALTHY breakfast pancakes for kids (well okay, adults too)! The smell of these pancakes cooking in the frying pan is just the most incredible aroma to wake up to. After many attempts at Gluten-Free and Vegan (dairy-free and egg-free) Pancakes and keeping them moist and a totally delicate, I think we did it! This recipe is a healthy alternative to conventional pancakes and they give some much needed added fibre and vitamins and minerals to our diets too.
