Chia Seed Pudding with Cacao (Raw Chocolate) – Vegan and just like old-fashioned Tapioca Pudding I first happened upon this delicious pudding last year in California while shopping in a very healthy grocery store in L.A.. I found it in their in the ‘take-out’ fridge section and was dazzled ever since. I was blown away at the simplicity of making it and the solid nutrition in it. There were 4 basic ingredients: Coconut Milk, Cacao Powder, Maple Syrup and of course, Chia Seeds. (Side note: Did you know that a Chia Seed can hold 9 times its weight in liquid? Yacon is found in the Andes Mountians in Peru. The ‘Apple of the earth’ as it is known in its native home across the Andes, this is the vegetable that looks like a potato but tastes like a watermelon!! Coconut Oil. Crazy Healthy – VERSATILE – Oil. Nutritionists have historically lumped coconut oil into the same category as cream, butter and lard, namely “off limits” because it consists mainly of “saturated fat”, the kind of fat linked to heart disease. Current science indicates that not every type of fat is evil. The crucial question is whether it consists of “Medium Chain” or “Long Chian” fatty acids. Medium Chain fatty acids, such as Lauric Acid, which makes up about 50% of coconut oil can be metabolized faster the long chain variety. Not Just Vegan – Why eat “Whole Food” Vegan Many people jump into a trendy vegan diet  with the thought that as long as they aren’t eating animal products (meat, fish, dairy, etc), they will be just perfectly healthy. However, white pastas, sugary cookies (did you know that Oreos are vegan?), white flour cakes and breads or even processed ‘vegan faux meats’ does not make for a healthy vegan! Nutrient Density measures the benefits you get from a food compared to the number of calories it contains. Nutrient-dense foods give you the most nutrients possible for the fewest calories. For example, some energy bars provide 15 percent of your daily folate (a B vitamin found naturally in certain foods- especially leafy greens) requirement for about 200 calories. A cup of raw spinach, on the other hand, packs the same folate punch for only 7 calories. Foods with high nutrient density provide relatively few calories (with tons of antioxidants, vitamins and minerals) and consequently give you a feeling of fullness with smaller portions.
