This is one of our favorite go-to smoothies. It’s loaded with vitamins and minerals. Substituting coconut water for regular water gives this — and you — a huge electrolyte blast. Great for beating that afternoon slump or replenishing after a workout! Active time: 5 minutes Total time: 5 minutes 2 cups coconut water 1/2 cup spinach ½ cup kale 2 frozen bananas, chopped into 1-inch pieces 2 Medjool dates, pitted 1-inch piece fresh ginger, peeled 1 teaspoon cinnamon 2 teaspoons flax seeds 2 teaspoons chia seeds 2 teaspoons hemp seeds In a heavy-duty blender, combine coconut water, spinach, kale, banana chunks, dates, ginger, cinnamon, flax, chia and hemp. Blend on high speed for about 1 minute or until smooth and creamy. Makes 2 servings Note: Chopping up ripe bananas and freezing them is the best way to achieve a delicious rich and creamy smoothie. This was a best-seller at Kindfood (now called Lettuce Love Cafe) from the day we opened! Women, especially, swear that it helps them to lose body fat. It’s perfect for the summer or anytime you think you need a quick detox. Chosen for their fat-flushing properties, these ingredients will make you feel vibrant and healthy! Active time: 5 minutes Total time: 6 minutes 1 red grapefruit, peeled and quartered 2 red apples, quartered 2 cups kale, including stems ½ cup fresh mint 1 lemon, peeled and halved 1. In the order specified, add the grapefruit, apples, kale, mint and lemon to a juicer. Juice and serve as soon as possible to get the maximum vitamin C from the citrus fruits. Makes 2 servings Note: By juicing in this order, the lemon cleans out the machine and pushes through the mint and kale.

More giggling in the New Year…what a concept and totally attainable. Even for this fresh, brand new 50 year old from 2013! In the spirit of not overburdening ourselves with too many ideas and goals and resolutions – I’m keeping this post short and hopefully, very sweet for you. What I’ve always found with “New Year’s Resolutions” is that it mostly weighs people down with goals and overwhelms us in so many ways – especially if the resolutions are struggles and aren’t being adhered to and we fail. We ultimately start with negative chatter in our minds and disappointing ourselves and this really makes no one happy – especially us. Time to say “NO” to these harsh and restrictive goals. Sometimes it’s just simply too much to burden our minds with ideas that we aren’t good enough (for example, if I lose 40 lbs. – then I will be happy…

What does it mean to be Gluten-Free? It’s estimated that 1 in 133 Canadians or 250,000 people have celiac disease (and it’s growing) and approximately 3 million Americans. It’s a lifelong, genetically based disorder that occurs when gluten – a protein found in wheat, rye and barley – triggers an abnormal immune response that damages the lining of the small intestine interfering with the absorption of vital nutrients. It can be painful and debilitating. Symptoms can include anemia, diarrhea, arthritis, intense abdominal pain, weight loss and, in children, delayed growth. But most people have symptoms that are subtler, such as bloating, excess gas or fatigue. People who have gluten ‘sensitivity’ will also benefit from a gluten-free diet. These people test negative for celiac disease but react poorly to gluten and may report abdominal pain, headaches, irritability, depression and chronic fatigue. So yesterday, I was feeling a little stressed (BIG time), needed a lift of energy and craved a little sweet stuff but also needed my greens as well. “Happy to be Irish Day” to all of you! Being of Irish descent (my mom’s mom was from Ireland). I LOVE that I get to flaunt it today.
