Seeing as we all tend to have a ton of time on our hands, this could be the perfect time to experiment with new baking ideas….This is a recipe from our book, Made With Love. This is a lovely wake-up bite on a Sunday morning. Imagine the aroma of delicious raspberries baking in the oven. We love these with our Raspberry Sauce or Lemon Glaze. Granola bars are good grab-and-go snacks but they are often fat-and sugar-bombs without enough protein to see you through. These unbaked bars come together very easily; they are gluten- and lactose-free and they have plenty of healthy protein, fiber and flavor to satisfy your snack-attacks. I’m already thinking chilly weather and soup season and wanted to change up my greens that I tend to eat daily. For some reason, it’s been a while since I’ve had broccoli and started craving it over the weekend. This soup was an a easy make for me and made enough for lunch yesterday and today. It’s nutritious, easy to make and you can freeze it for future lunches or dinners. I love cooking with non-dairy milks and creams and LOVE that I get ZERO bad cholesterols in my diet. Teff Brownies. Who would’ve thought? For most, I bet you have never heard of this nutritious grain/flour. I personally love the teff grain and experienced it a few years back in an Ethiopian restaurant and admired the taste of the flour they used to make their flat bread called enjera. One of the smallest grains in the world, it dates back to over 4000 years on this planet. I think what I love about eating gluten-free baking is that the grains and flours can be so densely nutritious. Teff is about 12% protein and it leads all other grains in its calcium content. A cup of cooked teff offers about 123mg of calcium which is comparable to a half-cup cooked spinach. Teff is also an excellent source of vitamin C, a micronutrient not commonly found in grains. I think more and more people are realizing the benefits of eating raw food and allowing this food to keep it’s nutrition and enzymes intact.
