Has our Summer flown by that quickly? I think we need to take advantage of the last couple of weeks of it and get all the beautiful produce while we can at the local farmer markets and in particular,  their freshly harvested cobs of corn. Corn on the cob!! Who doesn’t love this? Especially corn on the cob, roasted on the BBQ – It is synonymous with summer! Sweet summer fresh corn is so amazing eating it right off the cob but here’s another way to enjoy it (and perhaps save the dental floss while chewing on the cob). I’m off  to NYC! Back Friday….. Just a quick update that I’m off to NYC and to sign the book deal we’ve been waiting for! Erinn and I are so excited. This book will encompass everything we’ve been up to in the plant-based, healthy world and how we arrived to where we are today. Recipes from Lettuce Love Cafe and Kelly’s Bake Shoppe, “How-To’s”, Living your BEST LIFe ever….I can’t wait to share it all all with you. I know Erinn is super excited too. All joking aside, in this cooler climate, I love to hibernate. Did I say I LOVE to hibernate. Winter is not for me….I’m chilled to the bone most of the time and the only way to fix me up is a delicious, comfort food dinner with some yummy Californian Pinot Noir or Zinfandel, savouring it all in front of the fireplace and then followed by a warm sea salt bath….simple pleasures. Honestly, this is the only way to avoid me wearing woolly socks to bed (I know, this might be too much information!). I’m going to share with you a very quick and easy favourite dish of mine (and my hubby, Ken and daughter, Erinn and her boyfriend, Mike too).  The good news is you probably have all the ingredients in your home already!
