I made this for breakfast this morning and totally fell head over heels.
I’m a pumpkin fan (!!), especially this time of year, and dreamt about creating a perfect pumpkin pie smoothie that would be healthy, delicious and totally nutritious. It think it could be those spices we crave – especially in the fall and winter – that actually help to comfort us and keep us warm by boosting our metabolism. Here we are in September, and I’m already jumping the gun into fall. Ha!
Pumpkin Pie Smoothie
1 cup organic pumpkin puree (I use the organic ‘Farmer’s Market’ brand)
1½ cups plain almond milk or coconut milk or vanilla hemp milk
1 medium size banana, frozen preferred
2 Tbsp maple syrup
2 tsp coconut oil
1 tsp vanilla extract
½ tsp cinnamon
½ tsp nutmeg
½ tsp allspice
optional: add 2 Tbsp vanilla protein powder (SunWarrior or Vega vegan protein powders are best)
It’s so simple! Place all ingredients in your blender and blend until smooth and frothy. I put mine in a mason jar and drink it over the course of 1 to 2 hours.
This is a perfect autumn morning smoothie – even better when paired with a pumpkin scone from Kelly’s Bake Shoppe.
