My daughter Erinn… Well the time has come and she is officially done school…we celebrated Erinn’s graduation from McMaster University yesterday at our home. Thank you to my wonderful husband Ken (the best party planner ever), the event was spectacular. Dear Erinn, No words will ever fully express how I feel and what this day meant to me. Pride. Excitement. Joy for you. Sadness now that it’s done. Erinn, you are a gift to the world. You are not mine, but a gift that came through me… for me to give to the planet. With humble gratitude. Thank you for choosing me as your mom. You are not only my dearest friend, my motivational mentor, my spiritual life coach, my focus, and my loyal confidant, you also my daughter. The joys of my job! Heck, someone has to do it!!! On Sunday, we drove to Washington DC and now I’m back….exhausted. 22 hours of driving!! (well, me being the passenger and brilliant co-pilot). We got home at 1am last night and oh my goodness, it was worth it! The cupcakes, the people, the scenery…Washington DC is stunningly beautiful, tons of fresh air and friendly people!! What I found really remarkable were the amount of trees in this town. Our only problem on the way down was driving across the border with my “Weapon of Massive Health”….a Raw Collard Wrap!! Dangerous veggies! It freaked the border police so much in fact, we were sent to the Homeland Security Building to get our car searched. As crazy as it sounds, it is the truth and to be honest, the border guard wasn’t too nice about it. I did get to keep…

Happy Mother’s Day Mom! This is a very heart-felt tribute to my awesome mom, Colleen. The world is a whole lot brighter because of her love and her ‘spirited’ and energetic love of living. I just think the world of her and wish I’ve told her more often. I love her so much. Bright, always funny, extremely tenacious, and a survivor of a crazy life, she was never one to feel sorry for herself and today, she continues to be that same person. I’ve have been blessed with a fantastically wonderful life with my mom and sister and dad and now daughter, husband, brother-in-law, nephew and niece. Do you ever stop and visualize what’s possible in your life or business? Are you driven? Driven to not stop for any reason to attain our goals, even if it takes weeks, months, all hours of the night? Do you dream about things you want to happen and how you want your life to look?  (You must have that vision of what you truly want for that dream to show up or it simply can’t happen). This is an easy delicious dip for adults and kids alike. A great source of protein and fibre in every bite. We actually have this on the LettuceLove Cafe’s menu sometimes as it works well in Collard Wrap or a substation for mayo in our Kind Sandwich. I’ve been using this recipe for years and it never fails to give me a healthy snack that I could easily make every day. The trick to eating better (try to do the best you can every day) is to have healthy things in your fridge and pantry at all times so that you won’t be tempted to indulge in processed, sugary, fatty, unhealthy foods. Here’s how you get started: Note: You will need a food processor for this recipe. Ingredients: 1 15oz can of garbanzo beans, drained and rinsed. 1/2 cup water-packed roasted red peppers (about 2 peppers) 2 tbsp organic tahini…

April 19th, 1990. This was a special day for me. It was the day, 22 years ago, that my beautiful daughter was born – MY gift. She is by far my bestest friend, fantastic cupcake co-baker, and level-headed old soul. I’m humbled by her brilliance and how she always knows what to say or do in any given situation. I rely on her for her well thought out comments and ideas and opinions about life and people. She could run the planet single-handedly. We celebrated at Spencer’s at the Waterfront and were treated royally by Craig and Stephan and the whole team there! Thank you Spencer’s. This was by far the best vegan cuisine we have ever had. Thank you Spanky Dog Productions! When I watched it, I looked at it with wonder and said, “is this really me?” It was kind of one of those moments when you pinch yourself and say,”Hey!! This is YOUR life. Look at what you’ve done. See how many lives you’ve touched. Believe it!” I’ve made a promise to myself and to the people who follow me to reach out more often. I PROMISE!! We created a new name for our bakery that totally identifies with what we do…(organic) Gluten Free and Vegan Baking. That’s it. Delicious, Healthy. Life Changing. We named it Kelly’s Bake Shoppe… and we’re finding that it’s catching on very quickly. Happy 2012 to everyone on this beautiful planet.   It’s hard not to be grateful this time of year when I can reflect and count my many blessings that have been bestowed upon me in my life. My forever, adoring husband Ken, my dazzling and brilliant daughter, Erinn; her dashing boyfriend Mike; his wonderful family; my warm and loveable home; my spicy and HOT mom, Colleen; and my beautiful sister, Shannon; her wonderful husband, Peter and their two uber-amazing kids, Connor and Lizzie-Loo-Hoo. I have my health, my undying passion (that no one can take away), my business called LettuceLove Cafe and (soon to be NEW bakery location) Kelly’s Bake Shoppe. to share my love of food and people and my genuine concern for the health and direction of the population on this planet…..we live in such a fascinating day and age of opportunity and I’m so fortunate to have been given…
