Butternut Squash just happens to be one of the healthier things you can eat, and this recipe is totally delicious! This is a day for gratefulness and a little sentimentality….I’d be lying if I said I wasn’t a little emotional writing this. When it comes time  to speak of my dad, it chokes me up just because I miss him and his huge energy so much. Words will never be able to explain the depth of it. “Happy to be Irish Day” to all of you! Being of Irish descent (my mom’s mom was from Ireland). I LOVE that I get to flaunt it today.
