Why You Should Try Vegan And Gluten Free Recipes Today Food can do more than just nourish you physically. With the right food, you can also revitalize your mind and energize your soul. It’s not just about good tasting food — although that certainly helps a lot. But your breakfasts, lunches, mealtimes in between, and dinners should always make you feel good. While reaching out for that addictive salty bag of chips or that deep-fried, greasy bacon every day sounds like a fine idea, in practice, it can wreak havoc on your health and wellbeing. The overload of salt can produce excess sodium that increases your risk for stroke and heart disease. Not only that, high levels of sodium can also cause bloating, make your face look puffy, and give you bags under your eyes. Meanwhile, fried and greasy foods are also high in fat and can lead to increased…

My thought for the day (to work toward living an authentic life): About 7 years ago in California, we met a very wise, older woman that shared some brilliant words with us…words that have stuck with us until this very day and will continue to do so. They have kept us in a loving, grateful ‘present’ outlook within our life together. My incredibly patient and loving husband has had to endure some difficult, horrific family situations for the past 20+ years from his previous life. I’ve done my absolute best to be the rock he needed, in the most difficult of times. He needed to hear, back then, that he was on the right path to becoming his authentic self. With a lovely, wise smile, she lifted her head and she said most stoically, “Family is not necessarily one made of blood”. WOW! That was all we could say after these…

I must admit that my gnocchi are the most incredible comfort food to me on the planet. These soft yummy pillows of healthy deliciousness, that simply are surrounded by sauces that enhance the gnocchi, are something I look forward to so much when I make them. I save them for special days that I can enjoy the process of making them with uninterrupted peace and quiet and making usually two sauces to serve them with, and of course, a nice bottle of Chianti. On a side note, did you know that a single gnocchi is called a gnoccho? I learned that while researching and writing this blog today and thought I’d share that tidbit of trivia. I always thought it was gnocchis (plural) and gnocchi (singular) but I was wrong and it’s always fun to learn a new word. For this recipe, I’m giving you the easy addition of sweet…

Oh! To be a complete chef with all the tools to make your kitchen hum, it must never be overlooked the versatility of vegan cashew cream. It is a staple in our kitchen and can be stored in the fridge (3 days) or freezer (4 months but needs to be re-blended) so it’s ready to go at any moment’s notice. It is used as you would for creamy substitutions in so many creative ways: heavy creams for soups, mashed potatoes and sweet potatoes, pasta sauces, gravy, fillings for ravioli – the list is endless. The trick is to use RAW cashews only – this way they will not impart any flavour into the dish you are creating and they are solely your fat source to attach flavour too. (no you cannot use roasted) Your best bet too is to soak them overnight. Soaking allows them to be soft and break…

The UN’s theme for this year’s International Women’s Day 2014 is “Inspiring Change” Equality for Women is a Progress For All. Being the co-owner of Kelly’s Bake Shoppe and Lettuce Love Café, with my daughter Erinn has been an eye-opening experience for the two of us as women, to be able to open and run successfully BUSY businesses. It has not always been easy and it absolutely has had its ‘chauvinistic moments’ for example, when trying to establish ourselves with financial resources at the bank (“Are you going to have your husband sign with you?” What?!? Do most men need their wife to sign their bank loans?) or day-to-day activities with suppliers that ask if there is a man to speak to, to business meetings with lawyers and accountants that direct their conversations towards the men in the room (Hello! I’m sitting here too!). It has never been a dull…

The versatility of this vegan and gluten-free parmesan is incredible. It’s the perfect staple condiment that I use on everything from sprinkling on pasta and caesar salads to a topping on soups or enhancing an avocado or tomato sandwich. It is completely endless how many ways you can use this recipe You will need a food processor to create this parmesan and be sure to make enough for the fridge. It will keep well for 7 days. Brazil Nut Parmesan 1 cup Brazil Nuts 2 small garlic cloves, minced 4 tbsp Nutritional Yeast (found in the healthy aisles of grocery stores – Bob’s Red Mill makes one0 1/2 tsp Sea Salt (to taste, add more if needed) Add brazil nuts to the food processor and pulse on and off 10 or more times until coarsely pulsed. Then add the minced garlic and nutritional yeast and sea salt and pulse…

What an awesome video!! This is our latest work on healthy Gluten-Free Living. Filmed at Kelly’s Bake Shoppe, we shed light on some quick and easy tips on how relatively simple it is to go Gluten-Free. Gluten is found hidden in so many things like salad dressings and condiments like ketchup so beware of the many ways it can hurt your digestion without you even knowing you are eating it. It’s so important to read the labels of everything you purchase when grocery shopping, just to ensure you’re eating exactly what you think you are. Erinn and I are pretty diligent when it comes to grocery shopping always staying in the produce department and very rarely walking up and down grocery store aisles. These aisles are where primarily the processed foods are and these foods we should be staying away from the majority of the time (you got it- not…

With deep love and affection, I can honestly say that I would not be half the woman I dreamt I could have been without my Ken and his deep belief in me. His sensitivity, loyalty, love and genuine thoughtfulness and generosity are so rare in today’s world. I want to thank him for without him, I know I would not have found the drive and deep desire to go after my dreams and follow my passion. He is my #1 cheerleader! Ken created and orchestrated the space for Kelly’s Bake Shoppe from all of my dreams that were stored in my mind and everything I ever dreamed as a child making mud pies, came true for Erinn and I because of him. He created this childhood dream box (a “Once Upon a Time…” magical space) that customers can walk into and be transported and transposed into their own fairytale childhood and…

This is a guilt-free treat you will love, I promise. A delicious treat for Valentine’s Day for the kids and the other ‘big kids’ at home. Talk about a twist of fun here. Is this really HEALTHY? Nutritious? Really??! Most would say they’ve never thought of mixing ice cream with beet juice….Beet Juice?! With Vanilla Bean Coconut Milk Ice Cream? Yes, you’ve got to be crazy. Beets help beat cancer, anemia, and urinary tract infections. It bolsters your blood with iron and keeps it fully oxygenated and this is a wonderful way to sneak it in to your diet. The health-benefits of chocolate have been known to us for some time now, but there is more to chocolate that we need to know. Did you know that chocolate and cacao are NOT the same?
