I just wanted to take today to share with you all as to how incredible it is to live, work and play in Downtown Burlington. I am so blessed! I wanted to share with you why living this way has become so important to me and to focus on all the good stuff. I sometimes don’t realize how great I have it until we travel to other towns and cities and get a chance to see how others live. We always drive away and say, “Wow, we have it so good back home in Burlington!” With a population of about 187,000 in the City of Burlington overall and a downtown core population of about 6,500, I’m beginning to really be grateful and love and enjoy the more quiet, yet vibrant, hustle & bustle of Burlington over living in Toronto from my previous years. I’m off  to NYC! Back Friday….. Just a quick update that I’m off to NYC and to sign the book deal we’ve been waiting for! Erinn and I are so excited. This book will encompass everything we’ve been up to in the plant-based, healthy world and how we arrived to where we are today. What an amazing turnout…..Tuesday, June 3rd was our big celebration and we are loving that we’ve been open FOUR (4) years now and changing lives through eating better. On our last count, we think over 1200 people stopped by to visit. How is that possible??! My gosh, we are just this little family with big ideas. We’re still here for another 2 days – Just a quick (kind of quick) update on where we’ve been and what we’ve seen so far here in Costa Rica…so much to share and so little time. We spent our first night in Manuel Antonio (Quepos) and then off to Dominical Costa Rica. Dominical is this sleepy and VERY rustic little surf town in the south part of Costa Rica (Puntarenas Region) just south of Manuel Antonio, near Uvita. We arrived during their Green Season (better known as the rainy season) as May and June are known as the two months with the most rain. Yesterday was kind of a nesting day for me. I was pretty much done (physical wise) from everything that has been on my plate for the past three weeks. I needed a day to stay at home and just be with me and my Pj’s. Emotionally and personally, I had to deal with some pretty big changes and challenges in my life and am so grateful for my personal energy work, and friends and family to help me through it all and allow me to rise up from the other side. Somehow this is the winter that has never ended (today is no exception from 22C yesterday to 2C today) and it has just left so many of us ragged, full of toxins, sallow in colour and in need of a ‘Spring Tune-up’. We all need a new skip our our steps to be energized for this spring and summer and be healthy and vital enough to enjoy it. The same way we clean our homes in the Spring Season. we really need to be cognizant of the fact that our beautiful bodies need to be treated with the same care. With our homes we clean the windows inside and out, we hose down the driveway from dirt and salt and remove all the excess debris from the flower beds that were covered in snow, we clean out the garages and remove the build up of salt and sand that is…

All joking aside, in this cooler climate, I love to hibernate. Did I say I LOVE to hibernate. Winter is not for me….I’m chilled to the bone most of the time and the only way to fix me up is a delicious, comfort food dinner with some yummy Californian Pinot Noir or Zinfandel, savouring it all in front of the fireplace and then followed by a warm sea salt bath….simple pleasures. Honestly, this is the only way to avoid me wearing woolly socks to bed (I know, this might be too much information!). I’m going to share with you a very quick and easy favourite dish of mine (and my hubby, Ken and daughter, Erinn and her boyfriend, Mike too).  The good news is you probably have all the ingredients in your home already!
