Has our Summer flown by that quickly? I think we need to take advantage of the last couple of weeks of it and get all the beautiful produce while we can at the local farmer markets and in particular,  their freshly harvested cobs of corn. Corn on the cob!! Who doesn’t love this? Especially corn on the cob, roasted on the BBQ – It is synonymous with summer! Butternut Squash just happens to be one of the healthier things you can eat, and this recipe is totally delicious! I think of this soup as, “Comfort Food to the Max”, because it warms me somehow to the bone and makes me feel awesomely nourished. This squash is harvested from early fall through winter and can be found at most grocery stores and farmers’ markets. I easily find it at my local organic grocer all year round (remember to always look for organic). It’s very high in fibre, very low in calories but absolutely delicious in taste. So here I am with a few veggies on hand and they all look awesome! But what do you do if you have some onions, green apples, leeks, a green cauliflower and a celery root?
